I had a quick question over practice passage 1, page 82. For number 5, how do we know that the data of the re-test gave lower scores than the first test?

This comes down to interpreting table 1. What that table is showing is how participants' beliefs changed after undergoing whatever experimental condition they were assigned. The initial attitude column is actually showing what they thought before the study started. Then, the other columns are separated by intervention (or experimental condition) and then tally the average rating given after the intervention had taken place.
An example may help: for those who had an initial attitude ranking of "5 (meat okay)" all of them lowered slightly on "re-test" (after experimental condition). Those in condition 1 dropped, on average, from 5 to 4.4, those in group 2 dropped to 4.8, group 3 to 4.95, and so on and so on. To summarize, the first column shows initial test and then the next columns show re-test given a particular experimental condition. Looking at the rest of the data, it's clear that re-test numbers vary based on experimental condition.
